Matcha is made from the leaves of Camellia sinensis plants. The leaves are then crushed into very fine powder and the green tea plants for matcha are shade-grown for about three weeks before harvest and the stems and veins are removed in processing. Matcha powder has 137 times more antioxidants than regular tea has. Unlike other teas, which use tea bags or tea leaves that are removed from the hot water after steeping, matcha preparation involves consuming the ground tea leaves themselves. Because you are ingesting the entire green tea leaf, the caffeine content is much greater than green tea that is steeped.
Matcha has catechins, which has been noted as having antibiotic properties.
